Mom’s Fresh Strawberry Pie
This old fashioned fresh strawberry pie recipe is the perfect way to indulge your sweet tooth and bring some nostalgia to your life. Not only is it easy to make, but it’s also a great opportunity to make some special family memories.
One of my earliest childhood memories is watching my mom in the kitchen putting this pie together. Sometimes I would wake up from a nap and find it sitting on the kitchen counter. I knew we were in for a treat!
This strawberry pie recipe brings back so many wonderful memories of my childhood summers and of mom. This strawberry pie is perfect for those warm days and barbeques since you don’t need to bake it (aside from preparing the pie crust).

Why I like this recipe
Aside from the fact that this was mom’s recipe, so it is nostalgic, it is also very easy to make. You only need a few key ingredients and with a ready-made pie crust, you can have a fresh strawberry pie in no time.
The key to a perfect pie is to use the freshest, ripest strawberries you can find, as well as quality ingredients you can trust.
The key ingredients
- Ready-made pie crust
- White Sugar
- Cornstarch
- Cream cheese
- Fresh strawberries
How I make this recipe
- Prepare the pie crust as directed.
- Wash and remove the stems from the strawberries.
- Mash some of the berries (you’ll need a cup of mashed strawberries).
- In a saucepan, stir together mashed berries, sugar, and cornstarch.
- Add water and gradually.
- Cook until thickened and boiled.
- Boil for one minute, remove from heat and set aside to cool.
- Beat cream cheese until smooth and spread on bottom of cooled, cooked pie shell.
- Fill shell with remaining fresh berries and pour berry/sugar mixture over top.
- Chill to set and serve cold.

How do you store fresh strawberry pie?
Cover the pie loosely with foil or plastic wrap and keep in refrigerator. A fresh strawberry pie will last about 4-5 days in the refrigerator.
Can I use frozen strawberries for a fresh strawberry pie recipe? Yes and no. You can use frozen strawberries, however, I recommend you only use them for the mashed/cooked portion of this recipe (to make the sauce). Frozen strawberries will lose their consistency and will not give you the fresh taste you’re looking for in this recipe.
Can I freeze a fresh strawberry pie? I would not recommend freezing this strawberry pie recipe. The strawberries will become watery and lose their consistency.
Do you need to add red food coloring to a strawberry pie recipe? No. You do not need food dye for this recipe. Mom’s recipe for strawberry pie is vintage and so yes, at some point it did include red food dye. Over the past few years food dyes have become a great concern. While I did not include food dye in this recipe, I did some research and found there are a variety of natural food dyes on the market (derived from natural sources) that you can add if you like (unfortunately, mom did not have any measurements for the dye in her recipe).

Can this recipe be made vegan or plant based? Absolutely this recipe can be made vegan. Just use a vegan or plant based pie crust (handmade or prepared as directed) and use a non-dairy cream cheese (of your preference) to replace the dairy cream cheese in this recipe. You can also use alternative sweeteners if you prefer other options to white sugar.

Fresh Strawberry Pie
Ingredients
- 1 frozen pie crust
- 1 cup sugar
- 3 Tblsp. cornstarch
- 1 package (8 oz) cream cheese, softened
- 1/2 cup water
- 6 cups strawberries (about 1 1/2 quarts)
Instructions
- Prepare pie crust as directed on package. Set aside to cool.
- Wash and remove stems from fresh strawberries.
- Mash enough berries to equal 1 cup.
- In a 2-quart saucepan, stir together mashed berries, sugar, and cornstarch.
- Cook over medium heat, stirring constantly, until mixture thickens and boils.
- Gradually add water.
- Boil and stir for 1 minute then remove from heat and set aside to cool completely.
- Beat cream cheese until smooth and spread on bottom of cooled, baked pie shell.
- Fill shell with remaining fresh berries and pour berry/sugar mixture over top.
- Chill at least 3 hours or until set.
