This is an easy meal recipe that creates lusciously moist vegan banana pancakes. Even my non-vegan family members approve! It’s also one of our favorite “get rid of ripe bananas” recipe in our home. It’s become a weekend favorite. Hope this becomes a favorite in your home too!
It is important to note here that you do not need to use this recipe solely as banana pancakes. You can omit the bananas and increase the sweetener quantity for a delicious vegan pancake.Β
Vegan Banana Pancakes

Plant based butter
Maple syrup
Banana slices
Other fruit slices, such as: strawberries, blueberries, peaches
Chopped pecans or walnuts
You can omit the banana and increase the sweetener (if desired) to make a regular vegan pancake.
Ingredients
- 1 large ripe banana
- 2 tablespoons canola (or of your choice), plus extra to coat griddle
- 1 tablespoon maple syrup or apple juice concentrate (or other liquid sweetener of your choice--I like to use maple syrup)
- 1 cup non-dairy milk (of your choice)
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/4 tsp. salt
Instructions
- In a large bowl or pitcher, peel and mash banana.
- To this bowl, add oil, sweetener, and milk.
- Mix these ingredients well.
- Add flour, baking powder, and salt.
- Mix well and let sit for a few minutes--long enough for the coated griddle to heat up.
- Add by scooping 1/3 cup of batter and dropping on griddle to shape a pancake.
- Let pancake cook on each side for a couple of minutes (you'll know when bubbles start to form on top).
This pancake recipe is so easy because I have all the ingredients in my kitchen everyday. Can’t wait to try making these pancakes. I would top my pancakes with strawberries π

I made these amazing banana pancakes. Used almond milk and topped with walnuts. Hubby was blown away and loved them. Should have taken a picture but we were so hungry this morning π
