The Best Cabbage Soup Recipe
This cabbage soup recipe is filled with rich vitamins and flavor. The perfect meal for a cold day. It’s easy to make, frugal, and adaptable to anyone’s personal taste. You can use any vegetables you have on hand or that are in season.
Prepared as directed, this recipe is a vegan soup, however, it can also be used as a base for other soup recipes such as, albondigas (a Mexican meatball soup), chicken soup, or corned beef and cabbage.

This cabbage soup recipe is extremely frugal to make, especially when cabbage is in season. It requires very little preparation, it is uncomplicated, and simple. You can literally throw anything into this soup that you feel like eating and it will all workout with this recipe.
All the ingredients listed below can be adjusted to your particular taste and diet needs.
What goes in cabbage soup–the key ingredients
- Cabbage
- Celery
- Brown onion
- Carrots
- Zucchini
- Tomatoes
- Potatoes
- Fresh coriander (optional)
- Broth seasoning (either vegetable or chicken stock)
- Garlic
- Dried oregano
- Salt
How I make cabbage soup
- Wash all the vegetables you plan to use
- Add about 4 cups broth + 2 cups water to a large stock pot (preferably 8 quart)
- Add garlic cloves and onion, simmer until tender
- Add celery, carrots, and potatoes. Cook until slightly tender (about 15 minutes)
- Add all other vegetables, except cabbage and coriander
- When all vegetables are tender, add cabbage
- Lastly, when all vegetables are cooked to preference, add chopped coriander (optional)

Can I have this as a main dish?
Yes. This makes an excellent frugal dinner and warm dish for a cold day. It also makes a great meal if you are following a cabbage soup diet.
What goes with cabbage soup?
I like a hearty rustic bread like sourdough or French baguettes with this soup. You can have it as a side to a sandwich, but the soup is so filling, the bread is usually enough.
How long does cabbage soup last in the fridge?
This cabbage soup recipe will last in the fridge for 4-5 days, however, it is at its best if it is consumed within the first couple of days.
Can I freeze this cabbage soup recipe?
I do not recommend freezing cabbage soup as the cabbage will lose its texture after when thawed.
How to clean a cabbage
- Peel away the first one or two outer leaves.
- Carefully slice through the middle of the cabbage across the stem.
- Find the stem and cut a triangle over the stem.
- Give it a tug and pull stem off* You can stop at this step, however, further chopping and rinsing is also an option.
- Cut or shred remainder of cabbage and soak in cool clean water.
- Drain and rinse.
Note: Only clean cabbage that you plan to use immediately.

- 1/2 brown onion, chopped coarsely
- 3 carrots, sliced
- 2 small zucchini, sliced
- 2-3 Roma tomatoes, chopped in large cubes
- 2 medium russet potatoes, diced
- 1/4 cup fresh coriander, chopped (optional)

- 1 tsp. dried oregano
