The Best Banana Bread Recipe for Breakfast!
This is an easy banana bread recipe that can be made in advance for breakfast on the go or a nice side to a cup of coffee or tea. It also makes a healthy snack to pack in lunches.
I know my family purposely leaves bananas to ripen on the counter just so they can ask me to bake this bread. It has an amazing aroma too! Your home will smell so good!
The extra benefit this recipe adds is oats. That’s what gives this bread recipe it’s extra nutritional value. It’s not your typical banana bread recipe, as you will see.

What kind of pan to use:
Interested in the pan we’re using, find it here. I couldn’t find the exact color we have (ours is solid blue), but here is a link to a similar design. We use a Staub 9×9 baking dish.
How to slice:
You can slice as you wish. The instructions in this recipe demonstrate a 12 slice option, however, it is completely up to how you wish to serve. You can pour the batter in a bread pan, tube pan, or even muffin tins.
This is such an easy recipe, you can’t go wrong. Use whichever pan you prefer. In my house it’s guaranteed someone is going to cut into this bread before I do!
Some tips:
Oats — Make sure you are using rolled oats as the recipe describes. If you only have instant oats, it will still work, but will result in a softer (moist) bread. Not a bad thing. Use what you have or blend the two varieties using the measurements I have provided.
Oil — The oil in this recipe should be light and tasteless, but use what you are accustomed to using in your baking.
Optional Add-ins — I have added dark chocolate morsels to this recipe with excellent results. You can add other ingredients like dried fruit or nuts.
Egg substitutes — I’ve listed flax or applesauce as my go to for egg replacements, however, if you wish to make this with eggs, use one whole egg and one egg white in this recipe for good results.

Banana Oat Breakfast Bread
Notes
If you don't have ground flax meal, you can use 1/2 cup unsweetened apple sauce.
Optional: For a sweet treat, add 1/3 cup chopped dark chocolate morsels.
Ingredients
- 4 large ripe bananas, mashed
- 2 flax "eggs" (2 tablespoons ground flax meal + 5 tablespoons water)
- 3 tsp. canola oil (or vegetable)
- Dry ingredients:
- 1 1/4 cups all-purpose flour
- 1/2 cup unpacked brown sugar
- 1/2 tsp. table salt
- 1/2 tsp. baking soda
- 1/4 tsp. baking powder
- 1/4 tsp. ground cinnamon
- 1 cup uncooked rolled oats (old fashioned oats)
Instructions
- Preheat oven to 350°F and prep a 9x9 baking pan with cooking spray. In a small dish, mix together ground flax meal and water--set aside for about 5 minutes to gel.
- In a large bowl, mash bananas. Add flax "egg" and oil. Mix together.
- Next, add all dry ingredients to the same bowl and mix thoroughly.
- Pour batter into baking pan and bake until top of bread is firm to touch, about 35-40 minutes.
- Remove from oven and let cool in pan for about 5 minutes. Flip bread out of pan (carefully) and allow to cool on a wire rack for about 10 minutes.
- Slice down the middle and then across. Slice each of those four squares into three individual slices to get 12 bars.
